Add the agave syrup and both bitters to a rocks glass. Add a small splash of water — about a barspoon — and stir briefly to combine. Add a large, clear ice cube or a generous handful of ice. Pour the mezcal over the ice. Stir for 20–25 rotations, letting the ice chill and dilute the drink. Flame an orange peel over the surface — hold the peel skin-side down about 4 inches above the glass, hold a lit match between the peel and the glass, then squeeze the peel sharply to spray the oils through the flame. The brief flash of fire caramelizes the citrus oils and adds a subtle smoky note that complements the mezcal beautifully.
