Gin

The most versatile spirit in the bar. Gin's botanical backbone — led by juniper — makes it the perfect canvas for everything from crisp, citrus-forward highballs to rich, stirred classics. Whether you reach for a bold London Dry or a floral New Western, gin rewards curiosity.

Styles & Brands

London Dry

The classic expression — bold, juniper-forward, and bone dry. No artificial flavors, no added sugar after distillation. This is the gin that built the canon.

  • Beefeater

Classic juniper punch with bright citrus peel. The workhorse of the bar — ideal for Negronis, Martinis, and G&Ts where you want the gin to lead.

  • Tanqueray

Crisp, clean, and assertively juniper-forward with a hint of coriander. Exceptional in a Gimlet or a dry Martini.

  • Beefeater 24

A more refined take on London Dry — Japanese Sencha tea adds a subtle green, almost vegetal note. Great for elegant stirred drinks.

New Western / Contemporary

Juniper takes a back seat. These gins lead with floral, citrus, or exotic botanicals — cucumber, rose, lavender, yuzu. Refreshing, approachable, and endlessly food-friendly.

  • Hendrick's

Unmistakably floral — rose and cucumber define the profile. Refreshing and delicate. Perfect for a Southside, a Gimlet with a twist, or a simple G&T with cucumber.

  • The Botanist

22 hand-foraged Islay botanicals give this gin a complex, almost meadow-like quality. Herbal and slightly earthy — beautiful in a Tom Collins.

  • Monkey 47

47 botanicals from the Black Forest. Intensely complex — spicy, floral, and citrusy all at once. Sip it in a simple highball to let it breathe.

Old Tom

The bridge between London Dry and genever. Slightly sweeter and softer than London Dry, Old Tom was the gin of the Victorian cocktail era — essential for pre-Prohibition classics.

  • Hayman's Old Tom

Gently sweet with a rounded, malty softness. The go-to for a Martinez or a Ramos Gin Fizz — anywhere you want gin's warmth without the sharp edge.

  • Ransom Old Tom

Barrel-aged and malt-forward — closer to genever than London Dry. Rich and warming. Exceptional in a Martinez or stirred with sweet vermouth.

Sloe Gin

Technically a liqueur — gin infused with sloe berries and sugar. Deep ruby, tart-sweet, and warming. A British countryside classic.

  • Plymouth Sloe Gin

Tart wild berry with a warming gin backbone. Lovely in a Sloe Gin Fizz or simply over ice with tonic.
