Ingredients
- 2 ozcampari60 ml
- 3 ozclub soda90 ml
Instructions
Fill a highball with ice. Pour the Campari over the ice, then the club soda. Give it one brief stir so the red is even from top to bottom — Campari is dense and will sit in the bottom of the glass if you skip that pass. Garnish with an orange slice or a wide orange peel expressed over the surface and dropped in. The drink should be a clear, deep ruby, obviously sparkling, in a tall glass. No sugar, no juice.
Sips & Tips
Technique
Build, do not shake. The whole point is Campari and bubbles. Ice to the top or the last third tastes like warm bitter soda. One stir is enough to lift the Campari; ten stirs flatten the soda. Orange, not lemon — lemon turns Campari harsh. If you only have a rocks glass, use less soda and accept a shorter drink. The pre-bottled Campari Soda in the little cone glass is a different, sweeter commercial thing; this is the bar build.
Balance
Two ounces of Campari to three of soda is bitter on purpose. If you want it gentler, go 1½ oz Campari and 4 oz soda — that is still a Campari Soda, just a longer one. Do not add simple syrup to “fix” it; you wanted an Americano and forgot the vermouth. Club soda, not tonic: tonic’s quinine plus Campari is a different bitterness. San Pellegrino or any clean soda. The orange peel’s oil is the sweetness.
History
Campari and soda is the Italian aperitivo default — older than the Negroni, simpler than the Americano. Gaspare Campari’s bitters were already being lengthened with soda in the late nineteenth century. We are not inventing a creator. This is the SipSelect Kitchen two-ingredient serve: Campari, soda, orange, ice. The Americano adds sweet vermouth; the Negroni adds gin. Start here when the bar is empty and the bottle is red.
Campari Soda is two ingredients and an orange. If you want it softer, add soda, not sugar. Cheers.
Variations
Americano
Add 1 oz sweet vermouth and keep the soda when you want the next step up. Same orange garnish, same highball. Use it when the Campari Soda feels too stark.
Campari Tonic
Replace the club soda with tonic if that is what is open. More quinine, a little more sweetness. Garnish with orange still — grapefruit if you want it drier. Call it a tonic so nobody expects the clean soda snap.
