Sips & Tips
Technique
The Japanese method is precise: fill glass with ice, stir to chill the glass, top off ice, add whisky, stir 13 times, add soda, one vertical stir. Carbonation is sacred.
Balance
Use a light, delicate Japanese whisky (Suntory Toki, Nikka Days) — not a peaty Scotch. The soda should be ice-cold and highly carbonated. The ratio is typically 1:2 or 1:3.
