Ingredients

  • 2 ozmezcal
  • 2 ozfresh grapefruit juice
  • ½ ozfresh lime juice
  • ½ ozagave syrup
  • 2 ozclub soda

Instructions

Combine mezcal, grapefruit juice, lime juice, and agave syrup in a shaker with ice. Shake briefly and strain into a salt-rimmed highball glass with fresh ice. Top with club soda. Garnish with a grapefruit wedge.

Technique

The smoke from mezcal pairs incredibly well with grapefruit's bitterness. Salt rim is essential — it ties the smoke and citrus together.

Balance

Use fresh grapefruit juice (pink or ruby red). The agave syrup connects the mezcal to the citrus. This is more complex and interesting than a standard Paloma.
