Ingredients

  • 2 ozdark rum
  • 1 ozfresh lime juice
  • ¾ ozdemerara syrup
  • 2 dashesangostura bitters

Instructions

Combine dark rum, lime juice, demerara syrup, and bitters in a shaker with ice. Shake hard and strain into a rocks glass over fresh ice. Garnish with a lime wheel and a dash of bitters on top.

Technique

Demerara syrup (2:1 demerara sugar to water) adds a molasses richness that complements dark rum perfectly. The bitters add aromatic complexity.

Balance

Dark rum has more flavor than white, so it can handle a richer sweetener. The lime needs to be fresh and generous to cut through the rum's weight.
