Absinthe

The green fairy. Absinthe is a high-proof spirit distilled with anise, fennel, and wormwood — the ingredient that gave it its mythical (and largely exaggerated) reputation. In cocktails, a tiny amount — a rinse or a few dashes — adds an unmistakable herbal, anise complexity. Essential for the Sazerac and the Corpse Reviver No. 2.

Styles & Brands

French / Swiss Absinthe

The traditional style — distilled with grand wormwood, green anise, and fennel. Louche (turns milky) when diluted with water. High proof (55-72% ABV) but used sparingly in cocktails.

  • Pernod Absinthe

    The classic French expression — bold anise, fennel, and wormwood with a slightly sweet finish. A rinse is all you need for a Sazerac.

  • St. George Absinthe Verte

    A California take on the classic — more herbal and less anise-dominant than French absinthe. Complex with meadow herbs and a clean finish.
