- Amaro Nonino
Light, fruity, and gently bitter with notes of orange, saffron, and herbs. The most approachable amaro — essential for the Paper Plane.
- Fernet-Branca
Intensely bitter and medicinal with notes of mint, myrrh, and saffron. An acquired taste — sip it neat as a digestif or use it sparingly in cocktails.
- Averna
Rich and sweet with notes of caramel, citrus, and herbs. More approachable than Fernet — excellent in a Black Manhattan or a Toronto.
