Dark Rum

Where white rum is clean and neutral, dark rum brings depth — vanilla, caramel, molasses, dried fruit, and warm spice from extended barrel aging. Aged Jamaican Rum

Funky, fruity, and complex. Jamaican rums are pot-distilled with high ester counts — giving them that distinctive tropical fruit and overripe banana character.

  • Appleton Estate 12 Year

    Rich and complex with orange peel, vanilla, spice, and a distinctive Jamaican funk. The go-to for a premium Mai Tai or Rum Old Fashioned.

  • Smith & Cross

    Navy strength and intensely funky — overripe banana, pineapple, and pot-still character. Use sparingly as a float or split-base for tiki drinks.

Demerara Rum

From Guyana — rich, dark, and treacle-sweet. Demerara rums are heavier-bodied with molasses, burnt sugar, and warm spice. Essential for tiki and Navy Grog.

  • El Dorado 12

    Lush and decadent — toffee, dark chocolate, dried fruit, and a long, warming finish. Beautiful sipped neat or in a Rum Old Fashioned.

  • Hamilton 86

    Rich, dry, and complex with less sweetness than El Dorado. A bartender's workhorse Demerara — excellent in a Dark & Stormy or Navy Grog.
