Sherry

Spain's greatest contribution to the cocktail world. Sherry is a fortified wine from the Jerez region of Andalusia — ranging from bone-dry fino to rich, nutty oloroso. Its complexity and low alcohol content make it one of the most versatile cocktail ingredients in the bar.

Fino/Manzanilla

The driest and most delicate sherries — pale, crisp, and intensely savory. Essential for the Bamboo and the Adonis. Serve chilled.

  • Tio Pepe

    Bone dry with notes of almonds, green apple, and a saline minerality. The benchmark fino sherry — excellent in a Bamboo or served chilled as an aperitif.

  • La Gitana

    A manzanilla from Sanlúcar de Barrameda — lighter and more coastal than fino, with a distinctive salty, chamomile character. Beautiful in stirred cocktails.
