Simple Syrup
The most essential syrup in the bar. Equal parts sugar and water — clean, neutral sweetness that dissolves instantly in cold drinks.
Yield: About 1½ cupsUp to 4 weeks refrigerated
Ingredients
- granulated white sugar1 cup (200g)
- water1 cup (240ml)
Instructions
Combine the sugar and water in a small saucepan over medium heat. Stir until the sugar is completely dissolved — about 2–3 minutes. Do not boil; you just need enough heat to dissolve the sugar. Remove from heat and let cool completely before transferring to a clean glass bottle or jar. Refrigerate.
Tips
- 1.You can also make simple syrup without heat: combine equal parts sugar and water in a jar, seal, and shake vigorously for 2–3 minutes. The sugar will dissolve completely. This is called 'cold process' simple syrup and has a slightly fresher flavor.
- 2.Add a splash of vodka (about 1 tablespoon per cup of syrup) to extend shelf life to 6–8 weeks.
- 3.For a richer, more viscous syrup, use a 2:1 ratio of sugar to water. This is called 'rich simple syrup' and is sweeter — use half the amount called for in recipes.
