Instructions

Combine the gin, fresh lemon juice, and honey syrup in a shaker with ice. Shake hard for 12 seconds — the honey syrup is slightly thicker than simple syrup and needs vigorous shaking to fully integrate. Double-strain through a fine mesh strainer into a chilled coupe to catch any ice chips. The drink should be silky, bright, and perfectly clear. A thin lemon wheel or a small lemon twist on the rim is all the garnish you need.

Honey syrup is thicker than simple syrup, so shake this one with conviction — a full 12 seconds of hard shaking ensures the honey fully emulsifies into the drink. Double-straining is important here; the fine mesh catches any ice shards and gives the drink a beautifully smooth texture.

Balance

The classic ratio is 2:¾:¾, but honey varies enormously in sweetness and intensity. Taste your honey syrup before mixing — if it's a robust buckwheat honey, you may want to pull back to ½ oz. A floral wildflower honey is the most versatile choice. Use a London Dry gin with enough juniper backbone to hold its own against the honey's sweetness.

History

The Bee's Knees was born during Prohibition in the 1920s, when bartenders used honey and lemon to mask the harsh flavor of bathtub gin. The name was 1920s slang for 'the best' — and the drink lives up to it. It's a testament to how necessity breeds invention: a workaround that became a classic.

Gold Rush

Infuse your honey syrup with dried lavender — steep 2 tablespoons of culinary lavender in the warm honey-water mixture for 10 minutes before straining. The floral note pairs beautifully with a floral gin like Hendrick's or The Botanist.
