Pour the bourbon over the ice. Stir for 20–25 rotations, letting the ice chill and dilute the drink. Express a wide orange peel over the surface, run it around the rim, and either drop it in or perch it on the rim. A Luxardo cherry alongside is a welcome addition.
Sips & Tips
Technique
Maple syrup is thicker than simple syrup, so stir it with the bitters and a small splash of water before adding the ice and bourbon. This ensures it integrates fully rather than pooling at the bottom. The rest of the technique is identical to a classic Old Fashioned — build in the glass, stir gently, express the orange peel.
Balance
Use a bourbon with enough character to stand up to the maple's distinctive flavor — Buffalo Trace or Elijah Craig work well. Pure maple syrup (Grade A dark amber) has the most pronounced maple character; lighter grades are more subtle. The orange bitters are important here — they bridge the maple and bourbon beautifully. Don't skip them.
History
The Rustic Old Fashioned is a modern riff on the classic, swapping demerara or simple syrup for maple syrup. It became popular in the craft cocktail movement of the 2000s and 2010s, particularly in the northeastern United States where maple syrup is a regional staple. It's a seasonal drink at its best — warming and autumnal.
The Rustic Old Fashioned is the Old Fashioned's more relaxed, flannel-wearing cousin. Same bones, different character. The maple adds warmth and depth that makes this perfect for a cold evening. Cheers.
Variations
Rye Rustic Old Fashioned
Use rye whiskey instead of bourbon. The rye's spicy, dry character creates an interesting tension with the sweet maple — more complex and less obviously sweet than the bourbon version.
Smoked Maple Old Fashioned
Use smoked maple syrup (available at specialty food stores) or add a small piece of applewood-smoked salt to the glass before building the drink. The smoke adds a campfire quality that makes this a genuinely distinctive cocktail.
