Ingredients

  • 2 ozwhite port
  • 4 oztonic water

Instructions

Fill a wine glass or a highball with ice. Pour the white port over the ice, then the tonic, slowly, so the quinine foam sits on top for a second before it settles. Give it one gentle stir. Garnish with a thin orange wheel or a lemon wheel — orange if the port is floral and honeyed, lemon if it is drier and more citrus. A mint sprig is optional and should be slapped, not stuffed. The drink should be pale gold, obviously sparkling, and look like an aperitif, not a highball of mystery soda.

Technique

Build over plenty of ice. White port is already low enough that melting ice is part of the drink, but a half-empty glass of warm tonic is not. One stir. Do not shake. A stemmed wine glass is how you see it in Porto; a highball is how you drink it on a porch. Either is correct. Cut the citrus wheel thin so it does not read as a garnish dump.

Balance

Two to four is the café ratio. The bottle should say white port or porto branco — Taylor’s Chip Dry, Niepoort, or a decent Lágrima if you want it a little sweeter. Tawny or ruby port is a different drink and a worse one with tonic. Use a clean tonic (Fever-Tree Indian or Mediterranean); diet tonic tastes metallic against the wine. If the drink is flabby, the port is too sweet or the tonic is too soft. A lemon wheel will tighten it more than extra tonic will.

History

White port and tonic is a Portuguese café aperitif, not a 2010s invention. Shippers have been serving porto branco with tonic for a long time; it does not need a craft-cocktail baptism. We do not have a single named bartender to hang this on, so the source is SipSelect Kitchen: the two-ingredient serve as you would get it on a terrace in Vila Nova de Gaia, with a citrus wheel.

Variations

Lillet Tonic

Replace the white port with Lillet Blanc when port is not on the shelf. More floral, a little more bitter from the tonic. Use a lemon twist. It is a cousin, not a substitute with the same name.

Pink Port Tonic

Use a rosé port if that is the bottle you have. Same tonic, orange wheel. Sweeter and redder — fine for brunch, a little loud as a pre-dinner drink.
