Ingredients
- 1 ozfresh lime juice30 ml
- ¾ ozsimple syrup22 ml
- 10 leavesfresh mint leaves10 leaves

Instructions
In a highball glass, add the mint leaves, simple syrup, and fresh lime juice. Press the mint gently with a muddler — you want the oils, not shredded leaf soup. Twist the muddler two or three times and stop when you smell mint. Fill the glass with crushed ice. Top with club soda and swizzle until the glass frosts and the mint is pulled through the ice. Add a little more crushed ice to mound the top. Garnish with a fat mint sprig slapped between your palms and a lime wheel. The drink should be pale, icy, and green only from the mint — not from a syrup.
Sips & Tips
Technique
Muddle like a Mojito: press, do not pulverize. Black mint specks mean you went too far and the drink will taste grassy. Crushed ice is the texture; cubed ice makes a mint soda. Swizzle, then cap with more ice so the last sip is still cold. Slapped mint on top is the nose. There is no rum in this glass — do not rinse the glass with rum and keep the Virgin name. If you only have cubed ice, crack it in a bag.
Balance
One ounce of lime to three-quarters simple is brighter than a lot of restaurant virgin mojitos, which drown in syrup. Taste after the soda: if it is sharp, you can add a barspoon of syrup, not another ounce. Spearmint is the leaf; peppermint reads like toothpaste. Club soda, not Sprite — the lime and syrup are already the sweet-sour. This is 0% ABV on purpose.
History

Mojito (with rum)
Add 2 oz white rum to the house Mojito spec when you want the Cuban drink. Same mint, same crushed ice. That version is not this page.
Ginger Virgin Mojito
Replace half the soda with ginger beer when you want spice in the mint. Keep the lime and the gentle muddle. Use it if the table wants something closer to a mule.
