Ingredients

  • 2 ozcachaça
  • 1 wholelime
  • 2 tspwhite sugar

Instructions

Cut a lime into wedges and muddle with sugar in a rocks glass. Fill with crushed ice and pour cachaça over the top. Stir briefly to combine. Serve with a short straw.

Technique

Muddle firmly but don't pulverize the lime — you want the juice and oils from the skin, not the bitter pith. White sugar works better than simple syrup here; the granules help extract lime oils.

Balance

Cachaça has a grassy, funky character that's different from rum. The sugar and lime need to be in harmony — taste and adjust. Too little sugar and it's harsh; too much and it's cloying.
