Ingredients
- 1½ ozdark rum45 ml
- ½ ozbrandy15 ml
- 1 wholeegg
- 1 tbspsugar
- 4 ozhot milk120 ml
Instructions
Separate the egg. Beat the white until stiff, then beat the yolk with sugar until creamy. Fold together. Place a spoonful of batter in a warmed mug. Add rum and brandy, then fill with hot milk, stirring constantly. Dust with freshly grated nutmeg.

Technique
The batter can be made in advance and refrigerated. Warm your mug first with hot water — a cold mug drops the temperature too fast. The milk should be hot but not boiling.
Balance
The egg batter gives this drink its signature creamy, frothy texture. Don't skimp on the nutmeg — freshly grated makes a huge difference over pre-ground.
