Ingredients
- 1½ ozamaretto45 ml
- ¾ ozbourbon22 ml
- 1 ozfresh lemon juice30 ml
- ¼ ozsimple syrup7 ml
- ½ ozegg white15 ml
Instructions
Combine amaretto, bourbon, lemon juice, simple syrup, and egg white in a shaker. Dry shake (no ice) for 10 seconds to emulsify the egg white. Add ice and shake hard for another 12 seconds. Double-strain into a rocks glass over fresh ice. Garnish with a few drops of Angostura bitters on the foam.

Technique
The bourbon is essential — it adds backbone and prevents the drink from being cloyingly sweet. The dry shake creates a luxurious foam cap. Don't skip it.
Balance
Jeffrey Morgenthaler's version (with bourbon and egg white) transformed this from a punchline into a legitimate cocktail. The lemon needs to be fresh and generous to cut through the amaretto's sweetness.
